It is 1.30 in the afternoon and it’s chucking it down with rain outside. Apparently we can expect this to last until this evening, so going for a walk later is doubtful.
Having felt out of sorts yesterday, I had an early night and apart from a quick wakening moment around 2 am, I slept until 6 o’clock. I feel better today, but still tired. I have a theory about that which I’m putting into practice this week.
Hubby had an INR this morning, and hurrah, he is still in range and the next one won’t be for a fortnight! We don’t know the girls are well as those in the last surgery, so rather than individual Chocolate Santas, we’ll deliver a tin of Quality Street for all to share next week as the reception staff are nice too.
We did a bit a shopping and my freezer is now full, so I can’t buy anything else for that, but we now have a pretty good stock of goodies for the Christmas weekend.
Hubby and I have both got fed up with food, so today I did something different and we are hoping there will be no repercussions. We’re not vegetarians, but every week for years I used to do at least three meals without meat. This could be beans on toast with an egg on top, vegetable curry, egg salad, fish, or our vegetable stews over three days (this only counted as one meal though).
Today I did an old favourite from our ‘boating cuisine’ and made up sweet ginger and pineapple with rice. I’ve only done it a few times here, but with Hubby’s digestion issues over the last couple of years, we’ve given it a wide berth in case it was too acidic.
Using the juice from the can of pineapple, I added cornflour, a chicken stock cube, some grated ginger and garlic, and half the tin of fruit. I boiled it up in a saucepan while the rice was cooking in another, and when it started to thicken, added water so that it flowed rather than ‘set’!
It was delicious, and I think more so because we haven’t had it for almost a year.

A change in cuisine is always good.

Oh! Sounds almost like a sweet and sour sauce! I’m so glad it was a success for your husband – expanding the menu can take some of the tedium away. If its quick and easy that’s a big bonus!
I used to add vinegar, but that was too much, so now it’s just ginger and pineapple with a little sugar.
Funny, we had rain at 1;30 this afternoon, too. A real frog-strangler, too.
It is horrible here now John. The rain slashing against the windows sounds icy. Keep safe.
