Today’s consolation prize

I baked.
I was so fed up after today’s events and Hubby was yummy hungry, so I make rock buns.
I made 8 (and a small loaf cake which when cool was wrapped in greaseproof paper and put in the freezer)
This is what was left by the time I’d got the camera and washed up.
The ‘problem’ with my fruit cakes is that they are always best just out of the oven.

This recipe was reduced sugar, so
4 oz margarine
8 oz flour
generous handful of sultanas
2 oz sugar
2 eggs

Flour and margarine are rubbed together until resembling breadcrumbs (though it doesn’t matter if there are a few chunky bits of marg) add the sultanas and sugar, then bind together with the eggs.
Dollop by teaspoon onto a greased and floured baking tray, and cook in a moderate oven 180 C for twenty five minutes.
If any do survive to grow cold, they are nice with a slice of cheese and/or butter.
These didn’t.

From 2014 to 2017 'Home' was a 41 foot narrow boat where we made strong friendships both on and off the water. We were close to nature enjoying swan and duck families for neighbours, and it was a fascinating chapter in our lives. We now reside in a small bungalow on the Lincolnshire coast where we have forged new friendships and interests.

    I had a surprise today. Rhubarb crumble again from my neighbour. So that’s been my treat today.

    Your rock buns look great and I can imagine them tasting nice, while still warm. I can envision a mug of tea with those.
