5 Favourite Summer Desserts

This week, it’s our five favourite Summer desserts.

We’re not really dessert people, but it doesn’t have to be Summer for me to enjoy cheesecake, especially as I now have a great recipe which never fails
Yes, I made all of these…………………

Ice cream, or knickerbockerglory to be more specific (not mine, sob)
Crumbles.
I am Queen of the Crumble even if it did almost lead to divorce

Crumble topping being half granola, half porridge oats, cooked in the microwave.

Fruit salad,
With fresh pineapple, apricots, grapes, strawberries, raspberries, blueberries kiwi.

Ok finally, sponge

Not exactly a dessert, but you can add fruit to decorate, sandwich it together with fresh cream, put any ‘older’ cake (never in this house) in trifles or serve with custard if it goes wrong (renamed Di Surprise or Frisbee Cake).

I love to cook and am a bit of a dog whisperer as I get on better with them than people sometimes! We have an elderly dog called Maggie who adopted us as a 7 week old pup in March 2005. From 2014 to 2017 'Home' was a 41 foot narrow boat where we made strong friendships both on and off the water. We were close to nature enjoying swan and duck families for neighbours, and it was a fascinating chapter in our lives. We now reside in a small bungalow on the Lincolnshire coast where we have forged new friendships and interests.

    I love fruit pies. And a good berry trifle is heavenly. My downfall is a pecan pie which when made properly is so sinfully good that one must spend some time in the confessional. As for summer – a traditional Bomba (Italian) or Bombes (French) is both refreshing and delicious. But the standard summer dessert is the homemade ice cream sandwich – 2 homemade chocolate chip cookies with a nice layer of vanilla ice cream in between!
