Two Meat Free!

I wasn’t sure what to do for lunch today, but Hubby said he fancied something light with rice, so not having taken anything out of the freezer last night or having any salad stuff left, I opted for old reliable:
Ginger and Pineapple
It’s a basic sauce which can be added to chicken or pork, but sometimes we have it on its own with rice as we did today.
I’ve posted the recipe often, using the juice from the tin of pineapples (not in syrup), chicken stock cube and some cornflour to make it, adding half the tin of pineapple, peppers, a sliced carrot, 2 teaspoons of sugar, garlic, dark soy sauce and ginger.
I used to add vinegar, but when Hubby started having severe reflux issues, I dropped that and to be honest, I think it’s an improvement.

For SW members, the sugar, cornflour and pineapple attract syns but will be well below the daily 15 allowed so can be compensated for.

The second meat free meal was my jacket (baked for my American friends) potato and egg salad which I had yesterday. All of this is considered ‘free’ and any mayo attracts  1 syn per tablespoon as I have the lighter than light stuff.
As Maggie hasn’t been having her egg for breakfast for quite a while, we discovered to our dismay that our eggs were past their best before date, so I boiled up half a dozen and had 2 here.  They were fine, but when I crack the next ones, the nose test will come into play!

One more day to get back into target before weigh in/phone in on Monday.

From 2014 to 2017 'Home' was a 41 foot narrow boat where we made strong friendships both on and off the water. We were close to nature enjoying swan and duck families for neighbours, and it was a fascinating chapter in our lives. We now reside in a small bungalow on the Lincolnshire coast where we have forged new friendships and interests.
