Dinner today 22nd April

No, not another two day chili or three day stew.
Today we had a pork chop with potatoes, broccoli, carrots and apple stuffing.
In the cottage, it was lovely to go out into the garden and pick apples for sauce or a crumble. I haven’t bought bramley cookers for a long time refusing to pay what they were asking, and a jar of sauce is expensive so we’ve gone without.
Eating apples don’t work for sauce, even sliced and boiling them in the liquid if I cook chops in a frying pan, but today inspiration hit and this did work, being quite a tasty change and easy to make.

I had an 85g box of cheap stuffing in the cupboard (25p) and some apples in the fruit bowl that needed eating, so I made up the stuffing with a little less water than was suggested and grated an apple into the mix (I peeled it first but didn’t use the core).
I made 12 small balls and cooked them for 20 minutes in the oven.

We decided to have a photo put on canvas as we had for her predecessor Barney, and now have three pictures of our fur babies on the wall as we found a snapshot of my GSD so had hers done too. From 2014 to 2017 'Home' was a 41 foot narrow boat where we made strong friendships both on and off the water. We were close to nature enjoying swan and duck families for neighbours, and it was a fascinating chapter in our lives. We now reside in a small bungalow on the Lincolnshire coast where we have forged new friendships and interests.

    That looks absolutely delicious. And what a great idea to add the apple to the stuffing. Bet you could do that with a cake too.

    • I’ve done that with cake but didn’t allow for the juice so it came out heavy and sticky, but was OK with custard. Memo to self on that, add more flour!

    What a great (grate) idea!! I made a pork loin and grilled pineapple planks that I coated in a brown sugar/cinnamon mixture. It was delicious. I think the next time I make pork I’m going to copy your idea.
