It’s not often Hubby likes a dessert, but being a lover of all things custard, one of my fatless and sugarless microwave stodges goes down a treat. And as we purchased some maple syrup for our pancakes, well, he’s drooling a bit at the worktop……………….
Ingredients: Serves 1 generously or 2 adequately.
1 heaped tablespoon flour
1 egg
sultanas to suit (about a spoonful: we didn’t use very many today as he was having maple syrup too)
Put ingredients into a cup or mug, mix well.
Cook in microwave for one minute (should be well risen, soft and springy to touch and shrinking from the sides).
Serve with topping of your choice.

Notes:
1. If you want to make it for 3 or 4, double the quantities and use a larger bowl (ie, 1 pint pyrex dish).
2. You can make a treacle pudding by putting golden syrup on the bottom of a dish/mug and pouring the mix on top, or a chocolate one adding a spoonful of instant chocolate powder. No sugar is required because the fruit/treacle/chocolate provides the sweetness.
3. This does not keep unless you want to build your own wall of China in which case leave it for 24 hours as it goes rock solid!

It’s always nice as soon as it’s cooked. It doesn’t keep because there’s no fat/preservative in it and goes like a hard biscuit lump, so no good making it in advance. The sultanas or syrup give it the sweetness which you can add to suit your own palette.

Thanks for sharing that great and easy to do recipe AND the warning about concrete if it’s left. π You had asked, in the recent past, about the ‘pancake in a cup’ thing I bought. I finally cooked one of them (the blueberry and maple one). It was pretty darned good, but I undercooked it, so it was more like your pudding there than an actual pancake consistency. But I’ll get more of them, as that’s my kind of food…no fuss, no muss and straight on to eating! π
