Meat free dinners

Each week, I try to do at least one meal that is meat free.
I got into this habit years ago because I felt we were actually eating too much meat, and it was also a way of saving a few bob. Thee days we don’t eat a lot of meat anyway, and the plate is packed out with veg instead.
Hubby likes macaroni cheese, but over the last few years has found cheese too rich even though I cut back on my quantities. We were glad to discover that he can now eat fish after years of it triggering horrendous migraines, but it has to be 100% cod and even then it’s not as straightforward as it sounds as certain brands can still trigger a headache.
He’s not a fan of my pasta bakes, so the norm now is for him to have fish and I’ll do a tomato bake for myself as they take the same amount of time to cook in the oven.

This week, we’ve had two main meals that have been meat free, both of which actually cost less than a pound for the two of us.
Yep, two poached eggs on top of baked beans on multigrain toast.
It made a refreshing change, and was totally good for me because there was no butter on the toast!

The other meatless meal was my sweet ginger and garlic pineapple which we had today.  I added peppers and sliced carrot to the mix, and served it with rice and mushrooms.

Other meals this week have been chicken curry which I served with extra veg
and also a cottage pie with cheesy mash.

According to my scales, my weight has remained the same.
I have also been taking my BP every day as this is the first week on my new meds.
So far, so good.

From 2014 to 2017 'Home' was a 41 foot narrow boat where we made strong friendships both on and off the water. We were close to nature enjoying swan and duck families for neighbours, and it was a fascinating chapter in our lives. We now reside in a small bungalow on the Lincolnshire coast where we have forged new friendships and interests.

    All looks very tasty. I have a lentil soup bubbling away right now. I make it with onions, carrots, potatoes and tomatoes so it’s a meal on it’s own. I also eat very little meat, it’s been that way for several years now. Sort of lost my taste for it. Prefer fish and pasta and beans and lentils myself. And veg and fruit of course.
