I tried an experiment today and used dried apricots instead of tinned pineapple for my sweet ginger sauce to go with our chicken.
I thinly sliced a carrot, added two chicken stock cubes, grated ginger and some sugar, then added it to the boiled chicken having taken some out for Maggie.
It made a pleasant change and I’ll do it again when we get back, then I can add the garlic and soy sauce to the mix as usual which I couldn’t today as MSM can’t tolerate either and so didn’t have any in her cupboard.
It is gloriously sunny today and I walked the dog on my own, popping in to see some friends along the Avenue. They had been preparing for their holiday when I came down for my mammogram last month but she fell and broke her hip two days before. It was good to see them and for an 83 year old, she has bounced back extremely well!
We did a bit of shopping and returned to the shop having forgotten something only to discover they have the vehicle recognition scheme in force since revamping their car park and return is not allowed within a designated period.
I checked in the shop and they said it should be OK, and I confirmed that with the checkout operator. Once back at base, Hubby sent an email and I followed it up with a phone call. We are ‘genuine customers’ and I’m keeping the receipts to prove that. When we get the ‘fine’ letter we are to contact them and they will appeal on our behalf. The problem is we’re down here and the letter will go home, so we won’t be there to retrieve it. I could really do without this just now. My nerves are beginning to fray, though my BP this morning was nice and stable.
Looking forward to a relaxing afternoon now. Some challenges are due in later so I can do those, then there’s a puzzle on the go upstairs so I might settle down to do some of that.
A relaxing afternoon is a great idea. It’s poiring with rain here and I plan to have one myself.
We had torrential rain yesterday. I’ve just had a shower and washed my hair, so am all nice an shiny!
That’s what I’m about to do. I am not moving too quickly today. A former colleague and his wife moved last year about 3 hours away from Toronto. They came back into town for the weekend and threw a large “reunion” party last night and it was a very late night. Then I was so wired It took me forever to fall asleep and when I finally did, I slept very lightly, just hovering on the edge of consciousness. There may be an afternoon nap in my future.
Do you have to be at the hospital super early tomorrow?
yep…………… 8am, so we’ll be up at 6, I’ll walk the dog whilst Hubby’s having breakfast then we’ll be off by 7 to avoid traffic. I’m due to have the radioactive stuff put in at 10, so figure my surgery will be around 11. An hour and a half op, then an hour in recovery, then back on the ward all being well. They said I’d be staying in, but this might be revised if everything’s gone OK and then I can come home!!
Glad you had a good time last night. 🙂
And the best news is, Dick won’t be coming with you! You are sending him packing.
Oh yeah! He’s going to be facing the chop in more ways than one!!
👍😊
That’s good. Take it easy and relax
I’m trying, believe me!
I know. Sleep well.
Thanks
❤️
Enjoy your Sunday x
Thank you!
A serendipity that sounds delicious. The weather is overcast here…Have a beautiful Sunday!
You too Holly.
Thank you ❤
Hang in there and think positive thoughts. All the best. 🙂
Thanks Sci.
Wow, that meal with the apricots rather than pineapple sounds delicious!
How annoying that the shop doesn’t allow you to return within a short timeframe. Such a hassle to fight the fine.
It was rather delicious and probably better with garlic and soy sauce.
Hopefully we’ll be OK and I’m keeping the receipts. We’ll sort it out in due course. Get my op out of the way and take it from there.
Yes, I love pretty much anything with garlic and soy sauce.
All the best Di. Wilk be thinking about you tomorrow xx
Thanks Lorraine. I appreciate it.
You’re very welcome Di. It will be so good when it is all ever, and that won’t be too long now 😊
