Three Egg Omelette

It’s been a bit of a day, with breakfast delayed until 11.30, then lunch at 1.
Hubby had a slight mishap with his meds so we needed medical advice and had to go to the out of hours hospital surgery as our GP’s was closed.
Thankfully, all is OK so we were able to come home, but Hubby has to take things quietly though, which is like telling the wind not to blow in a gale.

With both of us hungry and badly in need of that first morning cuppa, we resisted having a Subway and had our planned porridge and cereal when we got back.
Lunch was day three of our stew and thus soup. Lovely.

I have discovered that for the size of my pan, three eggs are best to make a lovely fluffy omelette, which is what I had for my final meal today.
I had some chestnut mushrooms in the fridge and a few slices of chicken, so used them both up.
No cherry tomatoes today, and I’ve avoided fruit other than my banana and dried apricots with my breakfast. I’ve kept within my syn value though and munched on a carrot when I felt peckish, so I’m hoping for a small loss this week. We shall see on Monday.

From 2014 to 2017 'Home' was a 41 foot narrow boat where we made strong friendships both on and off the water. We were close to nature enjoying swan and duck families for neighbours, and it was a fascinating chapter in our lives. We now reside in a small bungalow on the Lincolnshire coast where we have forged new friendships and interests.
