Gotta break a few eggs……………..

Whenever I make an omelette, the top never seems to cook, and in turning it over, or trying to,  it all falls apart and I end up with mucky scrambled eggs and ‘whatever’ in the pan. Either that or it burns on one side beforehand.

Eggs are ‘free’ in SW, and I have discovered the joys (and success) of three egg omelettes.
I use a teaspoon of oil in the pan which has 2 syns (6 if you use a tablespoon) which is just enough to grease the pan without having the eggs floating in it (I hate greasy/oily dinners).

Recently, I have made two, one with ham and cheese, the other today with mushrooms.
The first would be synful with the cheese content as I wasn’t exactly mean with it, but today’s would have been free, other than the oil.

I was trying to remember today what I used to have for my second meal before, and passed a promotion display whilst shopping. It jogged my memory as it was the crackers I had with soft cheese or ham, so I bought 2 boxes. There are either five or six individual packets in the box, so no need for me to worry about them going soft once opened.

Yes, it’s all coming back to me now.

At least this Meatloaf is calorie and syn free.

We were close to nature enjoying swan and duck families for neighbours, and it was a fascinating chapter in our lives. We now reside in a small bungalow on the Lincolnshire coast where we have forged new friendships and interests.

  1. Omelets are tricky especially when you are trying to keep the grease to a minimum. Some folks use a lid on low heat to help cook the top but your pictures look great.

    • I used my poacher (without the ring thing) as it has a lid. I then managed to flip over one half on top of the other without making a mess, then turned it over to the other side after a few minutes to finish it off. Both were tasty, and another way of using some of those cherry toms. Only 80 or so to go now!
