March 16, 2018, prompt: In 99 words (no more, no less) write a story about carrot cake. It can be classic or unusual. Why is there cake? How does it feature in the story. Go where the prompt leads.
The challenge was which was better, oil, margarine or butter, and which measures, imperial, metric or ‘cups’.
The American team used oil and cups.
The Home team used margarine and metric.
The Boss used imperial and butter.
I made two, one oil and imperial, the other margarine and cups.
The judges were work colleagues and the final tasting was on the Friday.
At 50p a taste, the proceeds went to charity, all efforts identified by a number.
It was unanimous that whilst the cakes were all OK, it was the cream cheese frosting that walked away with the ‘prize’.
I love carrot cake. The challenge is all the carbohydrates and sugars. 😦
I’ve made it using either oil and margarine, but find the oil gives it a lighter texture. As long as you don’t mix and match your measurements, everything works out. I haven’t baked any cake for over 4 years as I never used the oven on the boat and the one here is iffy. I keep setting the smoke alarm off! It’s on the list for household replacements.
I agree about the cream cheese frosting. Carrot cake wouldn’t be carrot cake without that!

Have to admit the frosting is my favourite part of any cake.
Hubby’s too. He leaves it to last and then savours every forkful!
