1/2 sliced red pepper
1/2 sliced green pepper
1/2 sliced orange pepper
1/2 sliced yellow pepper
1 sliced large onion
6 medium sized sliced chestnut mushrooms
2 gloves garlic
1 stock cube
4 slices lean ham cut into strips
1 generous shake italian herbs
I put all of the ingredients except the ham and mushrooms into a large saucepan with a little water.
When the vegetables were soft, I added the final two ingredients and cooked for just five more minutes on a low heat.
A lot of water drains out of mushrooms, so this liquid can be discarded when serving.
This was our main meal of the day, served with pasta.

The extra bonus is that all of the veg is also ‘Speed food’, and for mine I added a side array of cherry and wedged tomatoes, another ‘Speed food’.
