‘What’s the recipe today Jim?’
You’re all probably too young to remember the UK’s Jimmy Young whose show featured 2 regular things, him playing one of his own hit records and a recipe.

Today was deigned a meat free day, so after we came back from our trip (post later), I went shopping for ingredients.

(Note: the pineapple juice wasn’t included in the sauce making bit today)

half a red pepper (sliced) 22p
half a green pepper (sliced) 30p
1 small carrot (sliced) 5p
4 white close cup mushrooms (yep, sliced) 15p
3 small gloves garlic (had to be used) approx 2p
white boiled rice 10p
I only used half a tin of pineapple, but put all of the juice in a saucepan with the peppers, carrot and garlic, cooking until soft.
I added my sauce and mixed thoroughly, then left to simmer on a low heat for about five minutes as it began to thicken (be careful it doesn’t ‘catch’. If it becomes too thick, add a little more water) .
I added the mushrooms last, letting them cook in the mixture but not get too floppy.
I always start my rice off first, bringing it to the boil in a covered pan, then turning off the heat and letting it absorb the water. By the time everything else is ready, so is the rice (usually!), so the meal is ready to serve.
